blueberry by spelled (low GI) – a good and easy blueberry pie with spelled – low GI.

Ingredients:
(6 portions)

4-5 Acid blueberry

10-15 walnuts (chopped)
2 teaspoon cinnamon or 1-1/2 tsp cardamom

1,5 dl spelled (whole)
1,5 dl havregryn (whole)
1/2 dl flaxseed (broken)
2 tbsp sweetener (or fructose)
100 g butter (Arla or butter & rapeseed oil)

Do this:
1. Preheat the oven to 200 grader.
2. Rinse, and blueberries in thin or .
3. Mix together spelled flour, oatmeal, linseed, sweetener and butter into a pie dough.
4. Add the the or the blueberries in a pie dish and sprinkle with cinnamon or cardamom and walnuts. Depending on how sweet you that pie will be, or how sweet the berries are so you can mix in some sweetener or fruit sugar.
5. Roll or flatten the dough between two sheets of parchment paper or plastic wrap until it becomes as big as pie. Remove the top sheet and invert the pie so it forms a cap, nibble with a fork.
6. Put pie in oven and bake for 30 minutes (200 grader).

Serving
Serve with whipped cream, light ice cream or custard!
