Gluten-free blueberry pie – a simple recipe for how to bake a gluten-free blueberry pie (Gluten-free) with almond paste.

Ingredients (10-12 portions)

3 dl MixWell light basmjöl
125 grams of margarine
1 milliliter baking powder
1 tablespoons sugar
2 tablespoon water

MINCEMEAT

50 grams of margarine
1/2 cup sugar
2 eggs
100 grams grated almond paste
3-4 dl blueberry
cinnamon to taste

Do this:

1. Work quickly the ingredients into a smooth pastry. It is perfectly acceptable to do it in a food processor.
2. Let rest in the cold 30 minutes.
3. Press the dough with floured hands into a pie dish.
4. Bake 10 minutes 200 grader.

Tillganing filling
1. Melting margarine.
2. Add sugar, the broken beaten eggs and almond paste. Simmer stirring the mixture thickens. OBS! It must not boil!
3. Pour the filling into pie shell.
4. Rinse blueberry. Mix blueberries with cinnamon and mix them into the batter.
5. Bake at 200 grader 40-45 minutes in the furnace bottom.
6. Serve with ice cream, cream or custard.
